You may remember me. My husband, Jim and I bought a half beef in October, picked it up in Pagosa Springs (with lot’s of insulation for keeping it frozen in our van), and enjoyed a lengthy conversation with you…. The June newsletter in my inbox reminded me, as it does every month, how much we appreciate being able to purchase beef from you. In particular, last month we were on our way to pick up our son from the University of Tulsa (he just graduated, yay!). The freeway passes by a stock yard just west of Amarillo. If nothing would convince a person to buy grass fed beef, the stench from that yard as we drove by should be enough. Once again, Jim and I commented to each other “thank goodness for GrassRoots Meats”. I just thought you and Allan might appreciate hearing it.
Also, you probably already have a favorite recipe for your roasts, but I wanted to let you know that I have had a lot of luck with a particular method from Cook’s Illustrated. We’ve cooked every eye of round this way and they have come out juicy and tasty every time.
