2 pounds of GrassRoots Meats ground lamb
1 large red onion, chopped
3 white potatoes, chopped
1 jar of Santa Fe Ole Extra Roasted Green New Mexico Chili, medium (or your favorite green chili)
Ground Cumin, salt, pepper to taste
In a stew pot, put 2 T olive oil, potatoes, and ground lamb. Sauté until the ground lamb is lightly browned. Stir in onion. Add salt, pepper, and cumin to taste. Add 16oz of green chili. Add 4 to 5 cups water. Bring to a boil, stir, reduce to a simmer and cook until potatoes are soft.
Serve with your favorite flour tortillas!
