Liver Pate’


  • 1 cup liver
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 bay leaves
  • 1/4 teaspoon thyme
  • 6 slices bacon
  • 3 to 4 cloves garlic, pressed or finely minced
  • 2 hard boiled eggs
  • 1/2 cup mayonaise
  • 1 large onion


Place liver in small saucepan and cover with the water; add salt, pepper, bay leaves and thyme. Bring to a boil, then reduce heat and simmer for 20 to 30 minutes until nice and tender, and the water is reduced to about half.

Meanwhile, cut bacon into small pieces and saute until crisp. Remove from pan and saute the onion and garlic.

Take out the bay leaves and combine all the other ingredients in a food processor. Process until smooth.

Taste and adjust seasonings if needed.

Transfer to a bowl and chill in refrigerator. Serve with crackers.
