- (3 - 4 pounds) Beef fat or suet

- Prepare the fat: Chop the beef fat into small, roughly 1-inch cubes.
- Place in pot: Put the fat cubes into the oven-safe pot.
- Preheat oven: Preheat your oven to 200-250°F (93-121°C).
- Bake: Place the pot in the oven and bake for 3-4 hours, or until the fat is rendered.
- Stir occasionally: Stir the fat every 30-45 minutes to ensure even rendering and prevent burning.
- Strain the tallow: Once the fat is rendered, remove the pot from the oven and let it cool slightly.
- Strain: Strain the rendered tallow through a fine strainer or cheesecloth into a clean container.
- Cool and store: Allow the tallow to cool completely and then store it in an airtight container in the refrigerator or freezer.
Tips for Success:
- Low and slow: Rendering at a low temperature is key to producing a high-quality, flavorful tallow.
- Don't overcrowd: Ensure there's enough space in the pot for the fat to render properly.
- Don't burn it: Keep a close eye on the fat and stir frequently to prevent burning.
