Lamb Loin Chops

Loin Chops look like mini T-bone steaks, and tend to be meatier and leaner than rib chops. They are excellent grilled, broiled or sautéed, and are best enjoyed cooked rare to medium-rare. While perhaps not quite as tender as rib chops, loin chops have a wonderful smooth flavor. On one side of the T-bone is the loin muscle, and on the other side is the tenderloin, a prized portion that is very tender and delicate.
