If the butcher is cutting ribeye steaks instead of a prime rib roast, the rack of ribs, also known as spare ribs, is the very flavorful covering over that meat. Beef spare ribs tend to be large and can be a tad chewy, but slow cooking in an oven or on the grill will make them very tender. Though you may have to put in some extra work to cook these tasty ribs, they’re an affordable option for a grilling feast. Beef ribs are large, usually measuring 6 to 8 inches. A full rack has 7 to 8 ribs. Plan on about 1½ pounds per person.
