Classic slow-cooker pot roast
This easy recipe yields a classic, comforting pot roast with tender vegetables and a flavorful gravy.
Chuck tender is a cut from the shoulder of the cow, known for its rich flavor and tenderness when cooked correctly. It is a tougher cut of meat, so it's best suited for slow-cooking methods like braising, roasting, or using a slow cooker to achieve a fall-apart texture.
Ingredients
- (3-4lbs) Chuck Tender
- (1 tbsp) Olive Oil
- (2 tsp) Salt
- (1 tsp) Black Pepper
- (1 lb) Baby Carrots
- (1 lb) Baby potatoes, halved
- (1 large) Yellow onion, quartered
- (2 cups) Beef broth
- (1/4 cup) Worcestershire sauce
- (1 packet) Onion soup mix
- Fresh herbs like rosemary & thyme (optional)
Directions
Instructions:
- Prep vegetables: Place the sliced onions, carrots, and potatoes in the bottom of your slow cooker.
- Season the meat: Place the chuck roast on top of the vegetables. Pour the beef broth over the meat, then sprinkle with the minced garlic, Italian seasoning, salt, and pepper.
- Cook on low: Cover the slow cooker and cook on low for 8 to 10 hours, or until the roast is completely fork-tender. Do not rush this process.
- Shred and serve: Once cooked, you can either shred the meat with a fork or slice it. To make a thicker gravy, remove the meat and vegetables, whisk the cornstarch and water into the remaining liquid, and cook until thickened.
