Chuck tender is a cut from the shoulder of the cow, known for its rich flavor and tenderness when cooked correctly. It is a tougher cut of meat, so it's best suited for slow-cooking methods like braising, roasting, or using a slow cooker to achieve a fall-apart texture.

Ingredients

  • (3-4lbs) Chuck Tender
  • (1 tbsp) Olive Oil
  • (2 tsp) Salt
  • (1 tsp) Black Pepper
  • (1 lb) Baby Carrots
  • (1 lb) Baby potatoes, halved
  • (1 large) Yellow onion, quartered
  • (2 cups) Beef broth
  • (1/4 cup) Worcestershire sauce
  • (1 packet) Onion soup mix
  • Fresh herbs like rosemary & thyme (optional)

Directions

Instructions:

  1. Prep vegetables: Place the sliced onions, carrots, and potatoes in the bottom of your slow cooker.
  2. Season the meat: Place the chuck roast on top of the vegetables. Pour the beef broth over the meat, then sprinkle with the minced garlic, Italian seasoning, salt, and pepper.
  3. Cook on low: Cover the slow cooker and cook on low for 8 to 10 hours, or until the roast is completely fork-tender. Do not rush this process.
  4. Shred and serve: Once cooked, you can either shred the meat with a fork or slice it. To make a thicker gravy, remove the meat and vegetables, whisk the cornstarch and water into the remaining liquid, and cook until thickened.
